Dulce de Leche 冰淇淋 ~ Dulce de leche Ice cream




 
原食谱取自 : Table for 2 ..... or More
 

材料(A ) :

Dulce de Leche   140g
蛋黄  3
鲜奶油  200ml
牛奶   250ml
香草香精  1茶匙

 
做法
1.鲜奶油,牛奶和香草香精放在锅里。以中火煮至滚。待冷。

2蛋黄打散,加入Dulce de Leche  ,搅拌均匀。

3.将1/2的(1)加入蛋黄糊里。搅拌均匀。然后再加入剩余的(1),再搅拌均匀。

4.过滤,倒入锅里。以中小火煮至浓稠状。待冷。

5.倒入容器,放入冰格里,每隔1小时用叉搅拌几下再放回冰箱,重复3~ 4次,(也可使用打蛋器搅拌)目的是为了防止它产生很多冰碴。

Ingredients :

3 egg yolks
Whipping cream 200ml
Fresh milk 250ml
Vanilla essence 1 teaspoon

 
Method :
1. Bring milk , whipping cream and vanilla essence in a saucepan to a boil on medium heat . Let sit for 5 minutes .

2. Beat egg yolks . Put in dulce de leche and mix until well conbined

 
3. Pour  1/2 of hot cream mixture into egg mixture .Whisk it immediately to prevent cooking .Pour in the balance of cream mixture and whisk .

4. Sieve mixture back into saucepan . Cook on medium low heat until mixture thicken .

5. Pour everything into a bowl .Let it cool down . Put in freezer . After one hour bring it out from freezer and  whack it with fork or mixer .Repeat this step 3 ~ 4 times  until the ice-cream is creamy  and thick .
