紫薯雪糕 ~ Purple sweet potato ice-cream




 
紫薯雪糕

材料:
(A
紫薯泥  250g ( 蒸熟)
全脂牛奶  200ml

(B)
蛋黄  3
   100g

(C)
植物性鲜奶油   250g

 
做法:

1.将才料(A) 放进搅拌机里搅拌成泥,备用。

2.材料(B)拌打至变白,加入1料,拌匀。隔水搅煮至糖溶解,待冷。

3.将材料(C)打至松发,加入紫薯料轻轻拌匀,然后倒入容器内,放在结冰处冷藏隔夜或至硬即可享用。

 

Purple sweet potato ice-cream

Ingredients :
(A)
Sweet potato 250g ( steamed )
Full cream milk 200ml

(B)
3 egg yolks
Sugar 100g

(C)
Non-dairy whipping cream 250g

 
Method :

1. Place ingredients (A) into a blender and blend into puree .

2. Beat ingredients (B) until pale , add in (1) mixture . Put into the top pan of a double boiler , double boil until sugar has dissolved . remove from heat and leave to cool .

3. Whip (C) until stiff. Add in the sweet potato mixture and stir lightly until well mixed . Pour mixture into a prepared container and put into the freezer overnight until firm .
