东炎虾 ~ Sour & spicy lemongrass shrimp soup ( Tom Yam Goong )


东炎虾

材料:
中虾 / 大虾   400g
  4
香茅   2 拍扁
南姜  3
疯柑叶   3 ~ 4
亚参膏  1汤匙 加少许水,搅拌均匀,取汁)
鱼露    1汤匙
指天椒   3
洋葱   半粒 切片
辣椒糊    2汤匙
磨菇   1
蕃茄   1 (切块)
酸柑  1  取汁
莞茜  少许
东炎膏  2 ~ 3汤匙 我没放

 
做法
1.水煮滚,加入香茅,南姜,疯柑叶  ,鱼露和亚参汁。

2.加入虾,煮大概3分钟。再加入洋葱,辣椒糊,磨菇和东炎膏。再煮7分钟,煮至虾熟透。

3.最后加入指天椒,蕃茄。熄火,加入酸柑汁和少许的鱼露,试味。洒上莞茜就可以了。

 

Tom Yam Goong ~ Sour & spicy lemongrass shrimp soup

Ingredients :
Medium or big size prawn   400g
Water  4 cups
Lemongrass  2 stalks ( smash with the side of a knife )
Galangal 3 slices
Kaffir Lime leave  3 ~ 4 slices
Tamarind paste 1 tablespoon ( mix with some water and get the juice only )
Fish sauce 1 tablespoon
 Bird   chilis    3
Onion   1/2 ( cut into slices )
Chili paste 2 tablespoon
Straw mushroom  1 can
Tomato  1 ( cut into wedges , 1/4  inch thick )
Lime  1  ( squeezed )
Some fresh cilantro

 
Method :
1. Bring water to boil over high heat .Add the lemongrass , galangal , kaffir lime leaf , fish sauce and tamarind juice .

2. Add in prawns, cook for 3 minutes . Then add in onion , chili paste , straw mushroom and tom yam paste .Boil for another 7 minutes until the prawns are cooked through .

3. Add chili , tomato .Turn off heat .Add the lime juice .Taste to adjust , adding fish sauce to taste .Garmish with cilantro and serve hot .
